RECIPES FROM STS P AND P'S KITCHEN GARDEN
AWESOME ORANGE CAKE (Great with a cup of tea!)
Ingredients
115 g butter
115 g margarine
500 ml fresh squeezed orange juice
285 g granulated sugar
400 g self raising flour
2 eggs
6 Tbs icing sugar, sifted
3 tbs fresh orange juice
Method
Preheat oven to 180 degrees and grease or line a square 23cm baking tray
Place butter and margarine in a medium saucepan over low heat until melted, then remove from heat.
Add orange juice and sugar and stir well.
Beat the eggs in a separate bowl and add to the saucepan along with the SR flour.
Mix until all the ingredients are well blended and pour into the prepared tray.
Bake for 1 hour or until cooked through.
Meanwhile place icing sugar in a small bowl and add the orange juice gradually whilst stirring to form a thin paste.
Pour icing over the hot cake and leave the cake to cool in the tin, then cut into small pieces to share.
