LEMON BISCUITS
Ingredients
175 g butter, softened
75 g castor sugar
175 g plain flour
75 g semolina
1 lemon, zested
1-2 tbs icing sugar
Method
Preheat oven to 165 degrees, grease and line trays with baking paper, set aside.
Beat butter and castor sugar until well combined. Add the flour and semolina and mix well. Add 3/4 of the lemon zest and knead the dough together.
Mix the remaining lemon zest with the icing sugar in a small bowl and set aside.
Roll out small balls of the mixture and then place onto the prepared trays, flatten each slightly with a fork.
Bake for 10-15 minutes until golden, then dust with the prepared sugar mix and your biscuits are ready to eat.
