CHAMPION CHEESE MUFFINS
Ingredients
2 cups grated cheese
1 & 1/2 cups self raising flower
1/2 tsp salt
1 tbps sugar
Pinch cayenne pepper
Handful garden herbs, chives or parsley
1 egg
1 cup milk
Method
Preheat oven to 210 degrees and grease a 12 hole muffin tin.
Place cheese, flour, salt, pepper and herbs into a larg bowl. Mix lightly with fingertips to combine.
Beat the egg and milk together in a small separate bowl.
Pour the wet mixture into the dry and fold together, taking care not to over mix.
Spoon mixture into prepared pan and bake for apporoximately 12 minutes or until the muffins spring back when pressed in the middle.
