SPINACH & BASIL PESTO
Ingredients
2 cups spinach
1 cup basil leaves
1 clove garlic
1 tbsn lemon juice
1/4 cup parmesan cheese
1 tspn salt
1/2 tsp black pepper
1/3 cup olive oil, plus extra if needed
Method
Place spinach, basil, garlic, lemon juice, parmesan cheese, salt and pepper in a food processor or blender.
Blend for 30 seconds. Add olive oil and process until smooth.
Add extra olive oil if needed to achieve desired thickness.
