BERRY MUFFINS
Ingredients
1/2 cup berries
2 cups SR flour
1 tspn cinnamon
1/2 cup honey
1 cup milk
2 eggs
1 tspn vanilla
1/2 cup oil
1 tbsn raw sugar (for the topping)
Method
Preheat oven to 180 degrees, spray muffin trays with oil.
Put flour and cinnamon in a bowl, mix and make a well in the centre.
In a separate bowl, whisk eggs, milk, vanilla and oil.
Fold into flour mixture, berries and honey.
Fill each muffin tin with mixture, top with raw sugar.
Cook 20 mins, until golden.
