CAULIFLOWER FRITTERS
Ingredients
1 lge cauliflower
1 cup frozen peas
1 & 1/3 cups plain flour
1 & 1/2 tsp garam masala
1/2 tsp ground turmeric
3 eggs
Pinch salt & pepper
4 tbs vegetable oil
Method
Bring water to boil in a saucepan. Add cauliflower and cook for 4 minutes.
Add peas and cook for 3 more minutes.
Drain and place vegetables in a large bowl, mash together.
Add the flour, garam masala, turmeric, eggs, salt & pepper, mix to combine.
Heat oil in a frypan over medium heat, cook tablespoons of mixture for 2 minutes on each side.
Transfer to a paper towel lined plate before serving.
Variation
If, like we do, you have a lot of zucchinis you can substitute:
1 cup of zucchini (grated raw)
1/2 cup cheese
instead of the cauliflower and peas.
