TOMATO SALSA
Ingredients
2 tomatoes, quartered, seeded and finely chopped
1 onion, thinly sliced
2 tsp finely chopped coriander
Pinch salt and pepper
Method
Combine all ingredients in a bowl and season to taste with salt and pepper.
Store salsa, covered in the fridge until ready to serve.
Note: The salsa would be yummy with nachos. Put the salsa on top of corn chips or pita chips. Top with grated cheese and put in oven until cheese melts.
PITA CHIPS
Ingredients
4 pita bread rounds, cut into chip sized bites
2 tbs olive oil
3 cloves garlic, peeled and chopped
Pinch sea salt and pepper
Method
Preheat oven to 160 degrees, line two baking trays with paper.
Mix olive oil, garlic, salt and pepper together in a small bowl.
Scatter pita bread pieces over the trays and brush with the garlic oil.
Shake the trays to ensure the oil reaches all pieces and season with extra salt and pepper if desired.
Bake for 6-10 minutes, or until crispy and golden.
