RECIPES FROM MRS MOORE
MIXED BERRY AND COCONUT BREAD
Ingredients
1c mixed berries
2 1/2c self raising flour
2tsp cinnamon
1c coconut
2/3c sugar
1c milk
2 eggs
1tsp vanilla
150g butter, melted
Method
Preheat oven to 200 degrees, grease and line a loaf tin with baking paper.
Sift flour and cinnamon into a large bowl, add sugar and coconut and mix, then make a well in the centre.
Whisk eggs, milk, vanilla and butter in a separate bowl and gently fold this into the dry ingredients.
Fold in the mixed berries until just combined.
Fill tin with mixture and bake for 45 mins, unitl golden.
