Easy Pavlova
Ingredients
2 egg whites, at room temperature
1 1/2 c caster sugar
1tsp vinegar
1tsp cornflour
4tbs boiling water
1/2tsp vanilla essence
2c whipped cream
2c assorted fruit slices
Method
Preheat oven to 180 degrees and line a baking tray with paper.
Beat all ingredients together in a large glass or metal bowl, until stiff peaks form.
Spoon mixture onto prepared baking tray to form a large round with a flat top.
Bake for 20 minutes, then reduce heat to 100 degrees and bake for a further 30 minutes. Turn off the oven and leave the pavlova inside to cool completely.
Decorate by spreading the whipped cream over the pavlova and placing assorted fruits on top.
