TABOULEH
Ingredients
1 bunch parsley, finely chopped
1/2 bunch mint, finely chopped
2 medium tomatoes, finely diced
2 spring onions, finely chopped
40 g burghul (fine cracked wheat)
Pinch salt, to taste
Dash lemon juice, to taste
Dash extra virgin olive oil, to taste
Method
Toss burghul in cold water, squeeze the water out and place in a medium bowl.
Add tomato, spring onion, parsley and mint.
Add salt, lemon juice and olive oil to taste and mix again before serving.
