RECIPES FROM MRS MOORE
CHOCOLATE POTATO CAKE
Ingredients
125 g butter
2/3 cup caster sugar
2 eggs
1/2 cup mashed potato
1 1/4 cups self raising flour
1/3 cup cocoa powder
1/2 cup milk
Icing sugar, to serve
Method
Preheat oven to 180 degrees and grease and line a cake tin with baking paper.
Beat butter and sugar in a bowl with electric beater until light and fluffy.
Beat in eggs one at a time until all combined.
Stir in the mashed potato and flour, then add the cocoa powder and milk and stir to combine.
Pour mixture into prepared tin and bake for 20 minutes or until a skewer inserted in the centre comes out clean.
Turn the cake onto a wire rack to cool and dust with icing sugar before serving.
