RECIPES FROM STS P AND P'S KITCHEN GARDEN
CHICKPEA AND TOMATO SALAD
Ingredients
1 punnet cherry tomatoes, halved
400 gr chickpeas, drained
1 red onion, finely diced
100 gr kalamata olives
2 tsp capers
1/4 cup lemon juice
3 tbs olive oil
Pinch salt and pepper
Pinch sugar
Method
Combine tomatoes, chickpeas, red onion, olives and capers in a salad bowl.
Mix lemon juice, olive oil, salt, pepper and sugar in a small, separate bowl.
Pour the lemon juice dressing over salad ingredients and serve immediately.
